What's the best way to smoke salmon???
One of the best things about salmon is the multitude of flavors it takes on, but does the way you cook it actually make a difference? We took the two most common ways to make this backyard staple and put them to the test. Which is better?

To be completely biased, I think the low and slow method worked out the best but they were both killer. That outer bark/pellicle that develops when its cooked at low temps is hard to beat. That being said, the hot & fast method seemed much richer.
