- Season liberally with rub or just salt and pepper
- Smoke at 250-300 degrees until internal temp reads 120.
- Wrap in foil with beef tallow or butter and return to grill until internal temp reaches 155-160
- Remove from foil and grill over direct heat until skin is crisped, checking for a final temp of 170-175.
