Turkey can Porchetta too!
Porchetta is typically done with pork, but you can dress your turkey in a very similar manner with great results!

- Carefully remove the skin from a medium sized turkey Remove the breasts, thighs and legs from the bird.
- Prepare a paste of garlic, red pepper flakes, sage, thyme, celery salt and peppercorns by adding to a food processor with vegetable oil and blending.
- Break down the dark meat into small pieces, then place within the open breast meat with the seasoning paste, then place the other breast on top.
- Wrap skin around the meat, then tie with butcher twine and cook till internal temp hits 170.
